Lots of Tomatoes? Make Bocconcini Salad!

If you’re growing tomato plants, you will quickly find out that you get a TON of tomatoes in a very short time. One of my favourite things to do with tomatoes is to make Bocconcini Salad – it’s a delicious, nutritious side dish that can be made in minutes.


  • Tomatoes (1-2 per person)
  • Bocconcini cheese (I’ve also used goat cheese, farmer’s cheese, and other mozzarella, and all are delicious)
  • Fresh basil
  • Chopped garlic
  • Olive Oil and Balsamic Vinegar

Step 1: Chop!

IMG_5973Chop the tomatoes and cheese into small, bite sized pieces, and put them in a bowl. Take about 5 leaves of basil and scrunch them up, and chop very finely, and add to the bowl.

Add 1-2 teaspoons of chopped garlic, and pour 1-2 tablespoons each of Olive Oil and Balsamic Vinegar over the top. Gently toss the salad until everything is combined.

Step 3: Serve

Serve as a side dish with any meal. If you’re preparing it in advance, don’t add the oil and vinegar until you’re about to serve it, or the salad will get mushy.
