If you’re growing tomato plants, you will quickly find out that you get a TON of tomatoes in a very short time. One of my favourite things to do with tomatoes is to make Bocconcini Salad – it’s a delicious, nutritious side dish that can be made in minutes.
Step 1: Chop!
Add 1-2 teaspoons of chopped garlic, and pour 1-2 tablespoons each of Olive Oil and Balsamic Vinegar over the top. Gently toss the salad until everything is combined.
Step 3: Serve
Serve as a side dish with any meal. If you’re preparing it in advance, don’t add the oil and vinegar until you’re about to serve it, or the salad will get mushy.
