If you don’t own a crock pot (also called a slow cooker), you absolutely should pick one up. They’re one of the most handy kitchen appliances out there, and you can make amazing meals with almost no effort. Especially if you work full time, you can cook a great meal by throwing a few ingredients into the pot first thing in the morning, and you come home to a great meal. You can get them in everything from small to large, in cute colours, and (yes, this one is kind of overkill) even wifi enabled ones that talk to your smart phone.
A great, easy crock pot meal is Baked Beans. This version is delicious, is way healthier than anything you can get in a can, is super filling (great if you have teenagers), and can be made vegetarian/vegan friendly.
Put the beans in a bowl and cover with 4 cups of water, and soak 8 hours or overnight to soften them. Afterwards, pour off the water, add 8 cups of fresh water, and boil for 30-45 minutes until the beans are soft.
Step 2: Everything in the Pot
Pour off the water from the beans, and add the beans, plus everything else to your crock pot. You can fry the onions with the bacon before adding them to the crock, but I’m lazy, so meh. They’ll cook in the crock pot anyway. Stir everything up until it’s very well combined.
Cook on low for 12 hours, or high for 6. If it starts to dry out, you may want to add a little water and give it a stir.
That’s it. It’s totally delicious as a main or a side, and is AWESOME at BBQs. Seriously, show up at a BBQ with homemade beans, and people will think you’re amazing.
