You can peel the potatoes first, but potato skin has a lot of fibre, and also I’m lazy. Cut them into medium-sized chunks, and place them in the bottom of the crock pot.

Put the crock pot on low for 8-12 hours, or high for 5-6 hours. When it’s done, the roast will fall apart like pulled pork, it’s so tender.
Pour the water off (I save it and boil it with some gravy mix for a fabulous onion-y gravy), and serve the roast and potatoes.
This is a great meal for leftovers – just throw some pork and potatoes in a container with some gravy, and it’s amazing heated up the next day.
