5 Minute Meals – Pork Roast and Potatoes

This is one of my favourite quick meals. Pork Roast and Potatoes in a crock pot. Seriously, if you don’t own a crock pot, you’re going to miss out on a lot of quick, easy meals that are delicious.


  • One pork roast. Any size, cheap cuts are fine
  • Potatoes (1-2 per person)
  • 1 package of onion soup mix, or 4 tbsp Homemade onion soup mix

IMG_5776Step 1: Cut the potatoes

You can peel the potatoes first, but potato skin has a lot of fibre, and also I’m lazy. Cut them into medium-sized chunks, and place them in the bottom of the crock pot.

Step 2: Put the Roast on Top

IMG_5778Place the pork roast on top of the potatoes. Mix the onion dip mix with 4 cups of water, and pour over top of the roast and potatoes.

Step 3: Cook

Put the crock pot on low for 8-12 hours, or high for 5-6 hours. When it’s done, the roast will fall apart like pulled pork, it’s so tender.

IMG_5779Step 4: Serve

Pour the water off (I save it and boil it with some gravy mix for a fabulous onion-y gravy), and serve the roast and potatoes.

This is a great meal for leftovers – just throw some pork and potatoes in a container with some gravy, and it’s amazing heated up the next day.
