5 Minute Meals – One Pan Pasta

Another great meal for a hot day. This dish feeds about 3-4, and can be made with simple, fresh ingredients. It’s a great light meal, and only takes a few minutes to prepare.


  • 1 chopped onion
  • 2 cloves of garlic, chopped
  • 2 cups cherry tomatoes, cut in half
  • 1 bell pepper, chopped
  • Spaghetti, 3-4 servings
  • Handful of fresh basil (this is super easy to grow yourself!)
  • 3 cups water

Step 1: Everything in the pot

IMG_5748Using a large sauce pan, place the spaghetti in the middle of the pan, and then place all the vegetables to either side of the pasta.

Step 2: Simmer

Add the water to the pan, and turn the burner to high until the water starts to boil. Turn it down to a low simmer, and let simmer, stirring occasionally. The pasta will start to absorb the water, and the veggies will cook. If the water boils off too quickly, before the pasta is cooked, you can add a little more.

Once the pasta is cooked, it’s ready to serve. Season with a little salt and pepper, and grate some fresh parmesean over it, if you have some.
